very ugly 1st timer kueh tutu but never been so sweet and fullfilling!
Method:
in a frying pan dilute brown sugar with a little water. Add freshly grated coconut. Stir well until the grated coconut flesh turn brown and when the water dried. Set aside to cool down.
In a separate mixing bowl, add salt to the rice flour. Pour in boiling water little by little and mixing it with the flour at the same time. Continue this step until you get the flour into the consistency of a bread crumbs.
Assembly:
Using any shallow tin mould you like, discard the flour evenly without pressing it down. Pour the coconut on top of the flour layer. Finally, discard another layer of flour on top until the coconut fully covered.
It's ready for steaming! Eat while still hot. Great to start you day with a cup of coffee or tea.

3 cups rice flour
a pinch of salt
2 cups boiling water
2 cups brown sugar
3 cups freshly grated coconut ( without the brown skin)
